Abstract:
    Spoilage of food is controlled by designing an anaerobic food packaging which contains oxyrase enzyme immobilized within a silica gel, this mixture is incorporated directly into the food packaging.
What is the unmet need in society that your idea will fulfill ?
    Sich kind of bioactive food packaging is able to reduce oxygen level below 0.01%, which is quite lower than the levels found in modified atmospheric pressures or vacuum packaging (0.3-3%). This would in return inhibit spoilage of food to extreme level.
Who needs it ? How many would benefit ?
   Introduction of such kind of packaging would provide benefits to a larger number of food industries like nestle, coca-cola.
How will the solution works
    An oxyrase enzyme is immobilized within a silica gel and sprayed over the pre-formed packaging material or the mixture is incorporated directly into the package structure. Oxyrase enzyme is stable over a wide temperature range about 40˚C and pH 6.8 to 9.4. This enzyme is basically involved in the removal of oxygen from semi-solid food, gases or liquids. It converts oxygen into water. Silica gel is basically applied to absorb water content within the packaging.
Who are your competitors ? How is your solution different
    Failure in modified atmospheric process or vacuum packaging is due to the permeation of oxygen through packaging material or presence of residual oxygen molecules. To overcome this such problem oxyrase enzyme is an efficient tool for capturing oxygen efficiently.
